Pesto tortellini with bacon and enoki mushrooms

Hmm, that pasta is amazing. Homemade? Uhm no, home bought in the supermarket. Luckily it’s just the two of us and nobody is asking difficult questions. Nothing can beat a good homemade pasta of course. However, today’s recipe shows that you can create a nice-looking dish in only 15 minutes, because you have to admit, appearance does matter.

Ingredients

  • 1 package tortellini filled with pesto
  • 100 g bacon
  • 200 g enoki mushrooms
  • 2 small radishes
  • Parmesan (flakes)
  • Fresh oregano
  • Olive oil
  • Salt and pepper

The stars of our dish are enoki mushrooms. This healthy Japanese variety has a refined taste and a crunchy bite. They are often used in soups or salads, but they also pair well with pasta or meat.

Bereiden en serveren

There’s not that much to say about the preparations, except that it is super easy. Fry the bacon and the mushrooms, boil the tortellini and finely slice the radish. Arrange everything on the plate, finish with Parmesan, fresh oregano and olive oil. Season with salt and pepper and enjoy!

We had a fresh glass of white wine with this dish.  It’s probably not perfect pairing, but the Grüner Veltliner, Winzer Krems, Sandgrube 13 (2013), is very tasteful.
