Lately we had seen some really nice Instagram pictures of ‘Pillows Grand Hotel Place Rouppe’, a brand new hotel that had just opened in Brussels. And guess what a couple of weeks later we received a very special invitation to discover this hotel. It must have been our lucky day!

Although most of the time we’re in Brussels our visit is work related, we can also appreciate the vibrant atmosphere of the city on weekends. To be honest, there’s in fact just one real big city in the country of Belgium and that’s Brussels. The Pillows Grand Hotel Place Rouppe is the perfect starting point to discover the area when you’re planning a city trip. And it’s an ideal place to relax and unwind after a busy day at work when you’re on a business trip. The hotel is located about 10 minutes walking from the Central or South/Midi station and very near to all major tourist highlights.
Architecture and design at Pillows
The Pillows Grand Hotel Place Rouppe instils new life into a neoclassical building, that used to be another type of hotel before. The refurbishment has changed the hotel into a trendy, classy place that tickles all your senses.
Although it can be a challenge to find the entrance, as no big signs are put up to show that there’s a hotel behind the beautiful facade… But at the same time the discretion and style is one of the biggest assets of the hotel.
As soon as you step into the refurbished Pillows, you will be welcomed by the residential ambiance of The Living, a place to enjoy good food and nice wines in a relaxed atmosphere.
Sweet dreams at Pillows
The rooms at Pillows Grand Hotel Place Rouppe embody charm and comfort. Spacious windows, the finest linen, original artworks and a dash of contemporary design all combine to create a serene and tranquil residential feel.
Comprising 43 generous and stylishly appointed rooms, Pillows Grand Hotel Place Rouppe takes a modern approach to elegance. All rooms feature king size or twin beds, a Nespresso coffee machine, a walk-in shower, a smart HD TV and a wireless sound system. In addition, some of the rooms enjoy the benefit and flair of a French balcony.
The best room at Pillows is the 46 m2 Pillows Suite, that has a spacious bedroom, a generously sized bathroom and a separate seating area. But hey, it’s all about the details of course, so we are definitely big fans of the handwritten welcome note and the cookies that are put in the room for us.
A fun detail we’d also like to share is the ‘do not disturb’-sign, which is quite uncommon, fun and charming. 🙂
Other activities, besides sleeping
In the two Salons events and meetings can be organised. The hotel can accommodate a total of 10-30 guests for business activities or private dining.
In the wellness and fitness area you’ll feel all stress fade away in no time.
Foodie fun at Pillows
The Living – Winebar & Lounge – is the heart of the hotel where the warm welcome and the all-day dining services melt into a perfect setting to unwind after a day in Brussels. The soft colours invite you to browse the pages of a book, taste a fine dish or sip a glass of wine.
The attentive hosts are ready to pamper guests with their favourite food and beverages around-the-clock. The local cuisine, the private dining rooms and the fireplace create an original and unparalleled blend of finesse and familiarity.
The quality of the food meets the expectations of high-end hotel guests, thanks to the skills of Head Chef Trung Hoang. He earned his stripes at, among others, Alain Ducasse at The Dorchester*** in London, Va Doux Vent* in Uccle and La Durée** in Izegem. Trung enjoyed his education at Spermalie Hotelschool in Bruges and subsequently successfully obtained a diploma in bakery and patisserie. After wanderings in Paris, where he interned at restaurant A.T., and in London, he started a new chapter in Brussels.
The chef and his team stand for an uncomplicated yet refined kitchen, respecting the local tradition, with a wink to the cosmopolitan world. Chef Trung describes his kitchen as simple, but refined. Guests can choose from a 2 or 3 course menu that changes daily.
We start our culinary journey at pillows with a cracker of flax seeds with a cream of Old Brugge cheese and mustard seeds.
Squid, almond cream, lentils and marinated leek are up next.
We continue the menu with Atlantic Cod, a mousse of watercress, cockles and bouillabaisse.
The main course consists of rabbit, figs, dukkah and gravy of roasted onion and sage.
For dessert there’s a creation of greek yogurt, sand dough, cassis cream and caramel and ganache ice cream.
After this very nice meal, we can enjoy a great night’s sleep in the hotel. Nothing more convenient than only having to walk 1 minute to be in bed.
Great start of the day
The next morning we enjoy a fantastic breakfast in The Living. Delicacies like homemade granola, fresh fruit, eggs, croissants, cheese and ham are served at the table on a pretty little etagère. There’s also a breakfast buffet with all kinds of treats like salmon, meats, brownies, etc.
In the meanwhile the sun has started to shine, while we have a good conversation with the host. What a wonderful way to say goodbye… We’re sure to be back here real soon.
